St.Lucia Cocoa Tea aka Ditè Cocoa
Ingredients:
1/2 cups grated cocoa stick
2 sticks cinnamon
1/2 tsp nutmeg
2 bay leaves
8 cups milk
Ground roast cashews
2 Tbsp flour
Sugar to taste
Method:
Gently heat milk in pan on stove top
Add grated cocoa stick into warm milk, add spices and cashew, stir gently and bring to low simmer for 5 minutes
Mix flour with a small amount of cold water, stir in some of the hot cocoa mixture and return to the same pan
Heat for another minute stirring well
Strain through a fine strainer, add sugar to taste and serve hot
